Oscar and Francisca Chacon of Finca Calle Lajas are third-generation producers who are committed to quality and innovation and are probably best known for being the first to produce Honey and Natural coffees in Costa Rica in the 2000s.
The Chacons determine which process to use based on the weather the day the coffee is harvested.
Red Honey is when the cherry is left on during the drying stage (as with a natural) but the coffee is turned several times a day--in this case, on raised beds.
